A Fields of Mistria most profitable crop cannot be named from sell price alone: compare each season's seed cost, growth time, repeat harvests, and the current sell price. The collected community-wiki crop table provides those fields, but NPC Studio's collected official sources do not publish an official profit ranking. A YouTube comparison in the research archive also makes its own assumptions, including normal outdoor farming and planting on day one. Treat its ranking as a transparent player calculation, not a permanent game rule.
Compare a complete crop cycle
The community table lists a crop's seed source or displayed cost, growth time, and sell price. Where two growth values appear, the research record preserves both values and does not assume an unstated meaning. A high sell price can still be a poor late-season choice if a crop needs too long to mature. Likewise, a repeat harvest can change the comparison when planted early enough.
What the collected seasonal table shows
The table lists peas in spring, tea in summer, onion and wheat in fall, and snow peas in winter among the crops with a 300t displayed seed cost and a 5-day; 3-day timing pattern. Use rankings only with their assumptions
The archived YouTube comparison calls peas, tea, onion, and snow peas its raw seasonal winners when planted at the start of each relevant season, and identifies wheat processed into bread as a fall exception. It explicitly says that a seed maker, greenhouse, growth spell, perk bonuses, processing, and late planting change the math. It also says expensive repeating crops lose their advantage later in the season. That caveat is the useful takeaway: a ranking without its assumptions is incomplete.
Choose for your current goal
If you need immediate cash, check the seed cost and days remaining instead of copying an early-season per-tile ranking. If you have a recipe and the relevant facilities, processing can matter, but it adds time and ingredients that the raw-crop calculation omits.
